Blew my mind today.

I like to cook, and I've never tried making pizza. Watched some YouTube videos for inspiration. Knowing I wouldn't likely get a dough recipe right first try, I bought one of those Pizza kits from the grocery story. Dough making directions were essentially "Just Add Water". So I did that, kneaded my dough, let it "rise" (more like wait... did not change at all), portioned it (4 dough chunks), and aside from chopping up some toppings that was it for the prep.

Yesterday's first attempt was good... too good. It wasn't perfect (like pizza toppings on a dome), but it tasted right.

Tried again today and .. wow.



So I'm blown away at how easy this is. I just take one of my dough portions and spread it out flat inside this small round cake tray I'm using (using a little bit of olive oil on both sides). Sauce it, cheese it, top it, then toss it in my toaster oven in top+bottom burner mode for ~10 minutes. Then yum.


I'm never buying frozen pizza ever again. :D

I had my folks over today for dinner, so I could try the Pizza on them. Conversation over dinner was how it was better than Pizza place X and Y. Success.

And now I get to take the next step: dough from scratch. The kit I used to make dough was easy: Pour package in large bowl, add some warm water, mix, repeat until dough becomes doughy (if too sticky add flour).

I've looked a few recipes, and the only thing I'm missing is yeast. I was hoping for a simple "put all dry ingredients in to a bowl then add water" type recipe, but my parents tell me yeast is more complicated than that (add sugar water, ferment). It makes me wonder then exactly what the kit's powder contents was. We'll see.

Don't you have to let dough rise for like hours on end when you make it all the way from scratch? It's been a long time since I did such a thing. I remember making some bread for Spanish class in high school a very many years ago. It was actually super good.

I just did some reading on that. Bread and dough making is basically mixing a chemical that produces gas with flour. Options include Yeast, Baking Soda, and Baking Powder. Yeast is the preferred one, but as you note it takes about an hour to rise properly. Baking Soda and Powder are far quicker, but you'll want to use it right away; If you wait too long, they stop being gassy and produce less-good results. Yeast is a micro-organism that produces the gas while eating sugars (an organism you kill once you cook), and the others produce gas through a chemical reaction (Baking Powder contains Baking Soda and a few more things).

The Pizza dough from the kit I made, looking at the ingredients, was a hybrid of Yeast and Baking Soda. I did some brief surfing on this, and I get the impression using both shortens the time need for a yeasty bread. That said, the dough from the kit may have actually been a really crappy dough. When cooked it puffed up nicely, and the flavors of the sauce, toppings, and cheese may have overpowered the quality of the dough. To be determined.

Do you have a mixer? That will make making the dough so much nicer. Will probably be more thoroughly mixed, too. Worth the investment, as you can use the thing to make pretty much anything. Pizza dough. Cookie dough. Cheesecake batter. Brownies. Whatever. Let a machine mix for you!

I have a hand mixer (*cough* unopened), but I mixed the pizza dough by hand. I figured I'd be getting my hands dirty either way (kneading).

Having never made dough/bread before, I'd say everything turned out really good, though I am wondering if I overpowered any faults of the dough with the flavors and toppings. The mixer is definitely something to try.

Ha, it turns out my pizza cooking technique was a bit of a fluke (toaster oven, dual element mode, cake tray). Its perfect for pizza, but completely worthless for bread... or my dough was just bad.

Anyways, made a first attempt at bread using a baking powder flower tortilla recipe (made tortillas too). Substituted margerine instead of lard. Didn't really turn out well. May have needed more margerine. The tortillas look right, but were too thick. My taste buds are off from sampling too much doughy bread (what I did with the rest of the dough; experiments), so I'm not sure if the taste is right or not (will taste again in the morning).

If it's any consolation (not likely), you get less (no) ads when watching on mobile devices. It might be the same thing in HTML5 mode, I forget.

been trying to use the Monk IDE for the Monkey language so I can make a html5 game for an idea I have. I hate relearning how to do this stuff, special syntax etc, and they use a stupid generic name so it's hard to search for things/samples/etc if I don't know what I'm doing.. so it's going slow. :\ I feel like I'll give up eventually like I normally do.. lol.
